Sundried Tomato Pasta Sauce.

Sundried Tomatos are amazingly delicious. And I am not going to brag...ok maybe I will a little, but this sauce I made the other day was just devine.

Yum.

So you will need;

1 can of chopped tomatoes
1/2 a jar of sundried tomatoes (about 12)
4 tablespoons of oil (use from jar of sundried tomatoes)
3 tablespoons of vegatable stock
1 teaspoons of fresh ginger
3 cloves of garlic
1 teaspoon of ceyenne pepper
1 teaspoon of paprika
3 teaspoons of basil
1 red onion

Dice the red onion and pour into the frying pan with the oil, garlic, ginger. Fry until softish. While this is happening chop up the sundried tomatoes and then throw them in with the paprika, ceyenne pepper, basil and vegetable stock. Right after pour in the chopped tomatoes. Let cook together for about 10 mins, Which is perfect time for putting on the pasta.

Pour on top. Mix through. However you like it. I like a little dollop of cream cheese on top. You may or may not.

This is sooooo tasty. And even tastier if you leave some for the next day.

The above recipe is enough for 2 servings.
